Manual labor is a term that can sometimes be overused in viticulture. But 100-year-old vines need to be looked after properly! They don't thank you with a high yield, but with a grape quality that a young vine can only dream of. And then the thing ferments for eighteen - EIGHTTEEN! - months! A normal wine can do this in about 10 days. The result is nothing less than remarkable: velvety-fresh, incredibly dense and ripe (without being jammy), fine yet powerful tannins and full of finesse. Who says senior citizens don't contribute anything to society!
